He works with chocolates from all over the world, including Cuba, Indonesia, Madagascar, Venezuela and Sao Tome We love his bees, Limousin cows, otters (the emblematic animal of the PNR de Millevaches) and his signature chocolate "SMAL" (short for St Marc à Loubaud, the village from which he hails), a blueberry fruit paste in a dark chocolate half-sphere.
